  • Colour: Vibrant coral-orange, naturally enriched with carotenoids from Panaferd®. 100% free from synthetic colorants.
  • Texture: A satisfying, meatier texture with a substantial bite, thanks to a high-quality, marine-rich diet and lots of room to swim.

  • Fat: Our fit, healthy fish have less fat and more flavour. Subtle bands of fat marbling — perfectly balanced for pan-frying.

  • Finish: Clean and pure on the palate, without lingering oil — a result of being fed a clean diet and raised in a clean environment.

  • Freshness: Harvested at sea, bled and iced immediately to lock in peak freshness. Within hours, they reach our own processing facility, prepared to exact customer specification. It doesn’t get fresher.

At harvest, we use the Ikejime Quality™ method—the most humane slaughter technique available. Our Process

  • Minimise stress at the point of harvest to retain the fish’s natural flavour and texture. Stress can trigger the release of cortisol, which can cause sour or metallic flavours.
  • Humanely dispatch the fish using the approved Ikejime Quality™ method—a precise percussive stunning technique that ensures instantaneous insensibility.
  • Immediately bleed the fish and store under ice-cold conditions to lock in quality and freshness.
